Ingredients:
- 1 can (15 oz) chickpeas, drained, rinsed, and skins removed
- 1 cup pumpkin purée
- ¼ cup tahini
- 3 tbsp lemon juice (about 1 medium lemon)
- 2 cloves roasted or sautéed garlic
- ½ tsp cumin
- ½ tsp smoked paprika
- ½ tsp kosher salt, or to taste
- ¼ cup Terra Delyssa Extra Virgin Olive Oil (for blending), plus more for finishing
- Toasted pumpkin seeds, for garnish
- Micro arugula, for garnish
- Black sesame seeds, for garnish
- Warm pita bread or crackers, for serving
Instructions:
- Add chickpeas, pumpkin purée, tahini, lemon juice, garlic, cumin, smoked paprika, salt, and ¼ cup Terra Delyssa olive oil to a food processor. Blend until completely smooth, letting it run 3–4 minutes. Add 1–2 tablespoons of water if needed to thin.
- Taste and adjust seasoning with additional salt or lemon juice if desired
- Spread hummus in a shallow bowl and use the back of a spoon to create swirls. Drizzle generously with Terra Delyssa olive oil.
- Garnish with toasted pumpkin seeds, micro arugula, black sesame seeds, and an extra sprinkle of smoked paprika.
