Ingredients:
1 teaspoon Whole Grain Mustard
1/2 teaspoon Sea Salt
1/4 teaspoon Ground Black Pepper
1 Tablespoon Fresh Lemon Juice
1 teaspoon Honey
2 Tablespoons Terra Delyssa® Extra Virgin Olive Oil
1/4 cup Red Onion, thinly sliced
2 cups Romaine Lettuce, chopped
12 ounces Sunset Wild Wonders® Tomatoes, halved
2 Tablespoons Capers, drained
1/4 cup Vegan Feta Cheese, crumbled
Fresh Basil Leaves, for garnish
Directions:
- In a salad bowl, whisk together the mustard, salt, black pepper, lemon juice, honey, and extra virgin olive oil until emulsified.
- To the lemon vinaigrette, add the thinly sliced red onion, romaine lettuce, halved tomatoes, capers, and crumbled vegan feta cheese. Gently toss the salad then garnish with fresh basil leaves.
