Whipped Coffee White Russian

DATE PASTE⁣
18-20 Terra Delyssa Organic Deglet Noor Dates⁣
1 cup of the soaking water ⁣

WHIPPED COFFEE TOPPING ⁣
1 tbsp hot water⁣
1 tbsp instant coffee⁣
1 tsp sugar (optional), helps achieve a fluffier consistency⁣

COCKTAIL⁣
2 tbsp date paste ⁣
1/2 tsp vanilla extract ⁣
1.5 oz white rum ⁣
1.5 oz Kahlúa ⁣
1.5 tbsp Terra Delyssa Robust Extra Virgin Olive Oil ⁣
Ice ⁣
1/4 cup whole milk (or plant milk)⁣

INSTRUCTIONS⁣
1. To make the date paste, add dates to a bowl. Cover with hot water and soak for 10 minutes. Place dates and 1 cup of the soaking water in high speed blender and blend until smooth. ⁣
2. To make the whipped coffee topping, combine instant coffee, hot water and sugar in a bowl, and beat with an electric mixer until fluffy and light (around 3 mins).⁣
3. To make the cocktail, add date paste, vanilla, rum, Kahlúa and olive oil to a cocktail glass, and mix well. Top with ice, milk and the whipped coffee.
