Gazpacho is a delicious, refreshing soup made with garden-fresh vegetables. It's perfect for hot summer days! We added some spice to our recipe by using our organic extra virgin olive oil infused with red pepper extract for an extra boost in flavor.

2 Tablespoons Terra Delyssa® Organic Extra Virgin Olive Oil
1 Tablespoon Terra Delyssa® Organic Extra Virgin Olive Oil Infused with Red Pepper Extract
4 Large Tomatoes, diced
1 Red Bell Pepper, diced
2 Small Persian Cucumbers, diced
1 Garlic Clove
1 Celery Stalk, diced
1 Scallion, sliced
1 Tablespoon Fresh Lemon Juice
1 Tablespoons Vinegar
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
Small handful Fresh Basil Leaves, plus more for garnish
- Wash and prep all of the produce. Chop some tomato, bell pepper, celery, and cucumber into a small dice and set aside for garnish.
- Add all of the ingredients into a high-speed blender and blend until smooth.
- Chill in the refrigerator for 30 minutes or serve immediately.
- Pour the gazpacho into bowls, garnish with the finely diced veggies, fresh basil and a light drizzle of Terra Delyssa® Organic Extra Virgin Olive Oil Infused with Red Pepper Extract.
