300g of Arugula
2-3 Celery Stalks, thinly sliced
½ cup Pecans
2 Tablespoon of Maple Syrup
1 Acorn or Butternut Squash, cut into pieces
2 Tablespoon of Terra Delyssa® Organic Extra Virgin Olive Oil
½ cup Pomegranate Arils
1 Apple, thinly sliced
200 g of goat cheese, crumbled
For the dressing :
1 Tablespoon of Chopped Chives
1 Tablespoon of Maple Syrup
2 Tablespoon of Red Wine Vinegar
¼ cup of Terra Delyssa® Organic Extra Virgin Olive Oil
- Preheat the oven to 400 °F. Place the squash on a baking sheet and add a drizzle of Terra Delyssa® Organic Extra Virgin Olive Oil. Season with salt and pepper. Cook in the oven for 20-25 minutes.
- In a pan, place the pecans and 2 tablespoon of maple syrup. Cook on medium heat for 2-3 minutes. Remove from the pan and place on parchment paper. Separate so they will not stick together and allow to cool.
- In a bowl mix together the chives, the red wine vinegar, the maple syrup and the Terra Delyssa® Organic Extra Virgin Olive Oil. Mix well and season with salt and pepper.
- Garnish the arugula with the celery, the roasted squash, the apples, the pomegranate arils, the crumbled goat cheese, the pecans and the dressing.
