Olive Oil, Dates, Pecan & Rum Ice Cream

 

Ingredients:

2 cups heavy cream 

1 can (14 oz) condensed milk 

2 tbsp Terra Delyssa Bold & Fruity extra virgin olive oil 

1 tsp pure vanilla extract 

2 tsp rum extract 

1 cup pecans, finely chopped, toasted 

8-10 Terra Delyssa Organic Deglet Noor dates, finely chopped 

Instructions: 

In a large mixing bowl, beat the heavy cream at high speed until thick and creamy (about 3 minutes). Add the condensed milk, olive oil, vanilla and rum extracts and beat at low speed until just combined.

Fold in the chopped pecans and dates.

Pour into a loaf pan or ice cream pan and let it freeze overnight or at least for 7 hours.
