6-8 small russet potatoes, cut in half, length wise
½ cup of pizza sauce
1 cup of shredded mozzarella cheese
2-3 slices of prosciutto, cut into smaller pieces
A few basil leaves
- Preheat the oven to 400 °F. Drizzle a sheet pan with Terra Delyssa® Organic Extra Virgin Olive Oil Infused with Garlic. Add the the potatoes to the a baking sheet, flesh side down. Season with salt and pepper. Cook in the oven for 20-25 minutes or until the potatoes are soft.
- Scoup out some of the potato flesh, enough to have space for the filling. Garnish each potato skin with pizza sauce, mozzarella and proscuitto.
- Put the potato skins back in the oven for 6-8 minutes or until the cheese is melted.
- Garnish with a few basil leaves.
