This mushroom & pea toast is so savory and full of umami! There are numerous ways to season your food other than using just salt and my two favorites are fresh lemon juice and a high quality extra virgin olive oil! For this recipe I am using Terra Delyssa Organic EVOO that is infused with garlic! 🧄 It has the perfect amount of garlic flavor and can be used for cooking and as a finishing oil!

2 Tablespoons Terra Delyssa® Organic Extra Virgin Olive Oil
1 Tablespoon Terra Delyssa® Organic Extra Virgin Olive Oil Infused with Garlic
4 Sliced Bread, toasted
8 ounces Cremini Mushrooms, sliced
2 Shallots, sliced
1/2 cup Green Peas
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1 Lemon, juiced
Fresh Parsley, for garnish
Fresh Basil, for garnish
- Heat a large skillet on medium then add Terra Delyssa® Organic Extra Virgin Olive Oil to the skillet as well as the sliced mushrooms. Caramelize undisturbed for about 8-10 minutes then add the sliced shallot, a bit of Terra Delyssa® Organic Extra Virgin Olive Oil Infused with Garlic to season then stir and cook for another 8-10 minutes.
- If you are using frozen peas, blanche in boiling water for 30 seconds up to 1 minute then remove to cool.
- Place the toasted bread slices on a plate then top with some peas and use a fork to gently press them into the toast. Next, top with caramelized mushrooms and shallot and more peas. Season with salt, black pepper, fresh lemon juice then garnish with fresh parsley and basil leaves.
- Lastly, drizzle with a bit more Terra Delyssa® Organic Extra Virgin Olive Oil Infused with Garlic and serve.
