This recipe for Baked Fish with Vegetables, made extra special thanks to the wonderful Terra Delyssa Extra Virgin Olive Oil.
This dish requires very little effort but delivers major flavor!

1 Tablespoon Terra Delyssa® Organic Extra Virgin Olive Oil
2 White Fish Fillets (Cod or Tilapia)
1 Red Bell Pepper, sliced
10 Grape Tomatoes, halved
1/2 teaspoon Sea Salt
1/4 teaspoon Freshly Ground Black Pepper
1 Lemon, sliced
1/4 cup Pickled Red Onion
- Preheat the oven to 425°F.
- Place one of the fish fillets in the middle of large piece of parchment paper then add the sliced red bell pepper and halved grape tomatoes around the piece of fish. Season with salt and pepper then drizzle with Terra Delyssa® Organic Extra Virgin Olive Oil. Place a couple of thin lemon sliced on top of the fish then fold each side of the parchment paper over, wrapping it like a present. Repeat with the second fillet then place both parchment pouches onto a large baking sheet.
- Bake for 15-20 minutes then carefully move to a serving platter and serve.
- Cut the parchment paper pouches open and garnish with pickled red onion and fresh parsley.
