Pink Pearl Couscous Salad
This salad is the perfect way to start off your Valentine's day dinner. It not only has a delicious & healthy flavor but also looks colorful, which will make it stand out among all other dishes on this evening!

2 Tablespoons Terra Delyssa® Organic Extra Virgin Olive Oil
1 cup Israeli Pearl Couscous
1 Red Beetroot, cooked
1 Lemon, juiced
1 teaspoon Sea Salt
1/3 cup Feta Cheese, cubed
1 Tablespoon Fresh Parsley, chopped
1. Cook the couscous according to package instructions then move to a bowl.
2. Grate or finely chop the cooked red beetroot and add to the couscous along with Terra Delyssa® Organic Extra Virgin Olive Oil, lemon juice and salt. Toss well to combine until each couscous pearl is pink.
3. Set aside and allow to cool for 10-15 minutes.
4. Once cooled, add cubed feta cheese, fresh parsley and serve.
